PEK with cream cheese, beetroot, lettuce and crisps
Ingredients
2 thick slices of white bloomer
1 tbsp cream cheese
1 medium cooked beetroot, sliced
1 little gem lettuce leaf, washed and sliced
½ a tin PEK, sliced
Handful of cheddar and onion kettle chips
Method
Spread the cream cheese on 1 slice of the bread, top with the slices of beetroot then scatter over the shredded little gem lettuce.
Add the slices of PEK and the crisps and then finish with the other slice of bread.
PEK with parsley mayonnaise, tomato, rocket and salt and vinegar kettle chips
Ingredients
2 thick slices of white bloomer
2 tbsp of mayonnaise
1 handful of fresh parsley, finely chopped
1 medium tomato, sliced
1 handful of rocket leaves
½ a tin of PEK, sliced
1 handful of salt and vinegar kettle chips
Method
Mix the mayonnaise and parsley together
Spread the parsley mayonnaise on 1 of the slices of bread, add a layer of sliced tomato, then add the PEK slices, sprinkle over the rocket and then finish with the kettle chips topped by the other slice of bread.
